The gentle decaffeination process known as Swiss Water Process preserves the notes we love in Ethiopian coffees, this one is Jammy, Sweet and has a little rustic rye note to it.  It brews up like a caffeinated coffee but will let you sleep at night.

Brew this one as you would a normal coffee, but limit the bloom time,  you can get away with a 20-30 second bloom.  A 15:1 water to coffee ratio will keep those jammy notes intact.
